Grandmother’s Homemade Noodles

In case you can’t read Grandmother’s writing, here’s what it says:

  • 3 egg yokes
  • 1 whole egg

Beat until very light.

  • Beat in 3 T cold water
  • 1 t salt

Stir in and work with hands

  • 2 C flour

Divide into 3 parts. Roll out as thin as possible. Place between 2 cloths until dough is partially dry (like a chamois.) Roll up like a jelly roll and cut into strips with a thin, sharp knife. Shake out the strips and allow to dry.
