I love Tabouli! I have to admit, it’s probably an acquired taste, but when it’s good, IT’S GOOD!!!
This recipe comes from Marilyn Pappano’s cookbook (she made it for me, but she really should publish it. It’s FANTASTIC!)
Tabouli Wheat
3-4 green onions, sliced
2 medium tomatoes, diced
1 large cucumber, peeled and diced
vegetable oil (I use canola)
lemon juice
fresh parsley
salt & pepper
garlic to taste.
Prepare the wheat according to package directions. Stir in vegetables. To make dressing, mix vegetables, oil and lemon juice to taste: start with equal amounts, then add additional lemon juice until desired tartness is reached. Dress the wheat mixture liberally; add spices and refrigerate for at least 2 hours. As the wheat absorbs the dressing, it may require additional dressing.
