1 large unpeeled cucumber
1/4 C vinegar
1 teaspoon salt
garlic powder to taste
1 8 ounce package cream cheese
1/2 C mayo
Wash and grate cucumber. Add vinegar and salt. Stir, cover and let stand overnight in refrigerator. Next day, press out liquid. Blend garlic powder, softened cream cheese and mayo, then combine with cucumber. Serve on bread or with crackers.
Store in airtight container in refrigerator up to three days.
